Fat and Saltish
Does anyone know how this fellow does what he does? I’m talking about the Saltish Mutton Karahi at Jharoka (and Bolan, Shinwari etc.) that just melts in your mouth. It’s the stuff that will have you full and wanting more.
I was surprised not to find this Northern Pakistan specialty anywhere in Lahore or Karachi. Perhaps I didn’t look hard enough? Another selling point for the capital ;)

Ti’s the one in front of 7-th Avenue (the store and not the road). Ti’s owned by Hashoo group so go at your own risk.
I take it no-one has a home-recipe for making this karahi, eh?
Ah ha .. this one by hashoot group too. I hated this very house anyways.
Put loads of salt in mutton karahi and keep it tender/pink … you;’ll get saltish mutton karahi !
I think its a good idea not to talk about fat, sweaty men making saltish food =D
